Chicken Wild Rice Soup

Ingredients

  • 2 chicken breasts
  • 2 cups cooked wild rice (amount from 1 cup uncooked is fine)
  • 1/2 cup butter (1 stick)
  • 1 large onion, chopped
  • 2 ribs of celery, diced
  • 12 small carrots, sliced
  • 2 small can mushrooms drained
  • 12 cups chicken broth
  • 1 pint cream
  • Salt and Pepper to taste
  • Directions

    1. Grill chicken breasts and set aside.
    2. Cook wild rice per recipe.
    3. Combine butter, onion, celery and carrots and saute in saucepan unitl onions are translucent (about 5 minutes). Add mushrooms and heat until warm.
    4. Heat chicken broth to boil then reduce to medium heat. Add onion, celery, carrots, and mushrooms.
    5. Add wild rice.
    6. Dice chicken breasts into small chunks and add.
    7. Heat soup to simmer.
    8. Add cream (temper by adding cream to small amount of soup then mixing in) and simmer for 10 minutes.
